Beans Stew infused with Koobi Chilli Oil
Make this one pot Honey Beans stew with Tuna and our new Koobi Chilli oil. Enjoy with Fonio, Lentils, Rice or flatbreads.
INGREDIENTS
500g of cooked Honey Beans (or any beans of your choice)
1 tin of Tuna flakes in brine
1 large Onion
2 tablespoonfuls of Organic cold pressed Coconut oil
250g of Plum tomatoes
100ml of water or vegetable stock
1 teaspoonful of our new Umami Koobi Chilli oil
30g of chopped Spring Onions
Koobi Seasoning Salt to taste
METHOD
In a pan melt the Coconut oil and add your sliced Onions & Koobi Salt to taste
Fry gently for 5 minutes on a medium heat and add your plum Tomatoes and water/stock
Cook gently for 15 minutes on a medium heat and add the Tuna flakes including the brine
Cook gently for 5 minutes then add the cooked Beans and Koobi Chilli oil.
Mix everything together till well combined and cook for a further 10 minutes.
You should have a double cream consistency to your stew.
Enjoy immediately with fried Plantain and or Gari Fortor.
Reserve and refrigerate any leftover in an airtight container and enjoy with Rice or flatbread for a different meal.
