Mackerel Stew using our Prekese and Holy Grail blends
250g of chopped Tin Tomatoes
50g of Tomato Purée
5 tablespoonful of Cold pressed Organic Coconut Oil
3 large Onions
1 levelled teaspoon of Buy Ndudu’s Prekese blend
1 teaspoonful of Buy Ndudu’s All purpose Holy Grail Spice blend
1kg of Mackerel
2 Habanero Chillies or Scotch Bonnets
3 Bullet Green Chillies or any Green Chillies
1 diced Green Bell Peppers
Buy Ndudu’s Koobi Pink Himalayan Salt to taste
Add the Coconut oil , 2 chunky sliced Onions and half a teaspoon of our Koobi Pink Himalayan Salt to a saucepan and sauté for 3-4 minutes on a medium heat
Add the Tomato Purée and fry gently for another 3 - 4 minutes
Add 2 Scotch Bonnet (The Level of heat should be to your preference) and fry for a minute
Add the Holy Grail Spice blend and fry for a further minute
Add the chopped Tin Tomatoes and rinse the tin with 100ml of water
Cook gently on a medium heat for 15 minutes ensuring you stir regularly.
Add the Prekese Seasoning blend and cook for 5 minutes
Add the Mackerel and cook gently for 10 minutes.
Add the remaining chopped Onions and cook for 3 minutes
Add the Green Bell Peppers and sliced Green Chillies
Taste for Salt and if it does require it then add it to suit your personal preference.
Enjoy your Stew with either Rice, Mashed Potatoes, Yam or Plantain.
