Oven baked Kelewele (Spiced Plantain)
The best part of mixing our Holy Grail Spice blend and Scotch Bonnet blend is creating the classic Ghanaian Kelewele Spice flavour.
Now all you need will be the following;
1 large ripened Plantain, peeled and cut into sizeable evenly chunks
1 teaspoonful of Buy Ndudu’s All Purpose Holy Grail Blend
A Quarter of a teaspoon of Buy Ndudu’s dried Scotch Bonnet blend (the quantity of chilli should be to your preferred heat levels)
2 large quartered Onions
2 tablespoonful of your preferred oil (Coconut oil is my preferred choice)
Salt to taste.
In a pan add the ripened Plantain chunks, holy grail spice blend, Scotch Bonnet & Salt to taste
Mix everything together till it’s well combined and allow to marinade for an hour in the refrigerator.
When ready to cook;
In a baking pan add the Coconut oil, Onions and Salt to taste
Mix everything till it’s well combined and place under a preheated grill at 180*c for 5 minutes
Remove from the oven and spread your spiced Plantain over the surface.
Change your oven settings from Grill to Baking and place your Plantain in the oven.
Bake for 10-12 minutes at 180*c .
Sprinkle with some spring onions and mild red chillies.
You have the option of also adding a few roasted Peanuts or Cashew nuts for the ultimate Kofi Brokeman vibes 😉
Serve alongside your preferred Sunday Roast, Jollof Rice or better still enjoy it as a snack.
