Oven baked Seabass with Fennel & Koobi Seasoning
Family let’s make this one pot Oven baked Seabass with Fennel, Koobi & the Lemon Yassa seasoning.

INGREDIENTS
2 Seabass (cleaned and gutted)
1 large shredded or thinly sliced Fennel bulb
1 large sliced Onion
3 large sliced ripened Tomatoes
4 tablespoonfuls of Olive oil
3 large washed and thinly sliced Maris Piper Potatoes
1 levelled tablespoon of Buy Ndudu’s Koobi Seasoning blend
1 teaspoonful of Buy Ndudu’s Lemon Yassa Seasoning
Buy Ndudu’s Koobi Salt or Smoked Ada Salt & Sichuan Pepper Seasoning to taste
METHOD
In a bowl mix the Potatoes and Koobi seasoning together.
Next add the Onions and Tomatoes to the Potatoes
Mix 1 tablespoonful of Olive Oil and Salt to taste to the sliced Fennel
Now add the seasoned Fennel slices to the Onions, Tomatoes and Potatoes.
Bake this in the oven at 180*c for 10-15 minutes.
Place the Seabass on top of the Potatoes and bake for 8-10 minutes.
Let it rest for 3-5 minutes and serve.
Enjoy with a glass of Sauvignon Blanc Wine or Txakoli White Wine (from the Basque Region of Spain)
