French Baked Potatoes with Smoked Cod & Koobi (Brandade de Morue)
Family make this Baked Potato and smoked Cod dish for your next dinner party or for dinner. Best to make this in a big batch for your weekly meal plan as it freezes well.
INGREDIENTS
3 large boiled and mashed Maris Piper Potatoes seasoned with Koobi Salt to taste. (400g)
300g of smoked Cod
1 teaspoon of Buy Ndudu’s Herby blend
1 tablespoonful of Koobi Seasoning blend
6 tablespoonful of Extra Virgin Olive oil
2 large diced Onions
30g of Butter
200g of Cheddar Cheese / Gruyère Cheese (leave 50g for garnishing)
150ml of whole milk or double cream for a richer consistency
30g of Panko breadcrumbs
40g of Parmesan Shavings
Half a teaspoon of Buy Ndudu’s Ghana 5 Spice blend
METHOD
Peel and boil your Potatoes and season with Koobi Salt
Once the Potatoes are fork tender place them in a bowl and mash them whilst hot
Add 3 tablespoonfuls of olive oil, Koobi Seasoning blend and mix till well combined
Add your preferred Cheese and whole milk
Mix till it’s well combined and add the smoked Cod pieces
Carefully mix everything together whilst you tender to the Onions.
Sautéing the Onions with Herby Blend
In a frying pan, add the butter, the remaining olive oil , diced Onions, our herby blend and Koobi Salt to taste
Let this cook on the lowest heat possible until the onions are translucent and sweeter in taste. This might take 10-15 minutes
Preheat the oven to 180*c
Add the sautéed Onions to the mash and gentle stir till it’s well combined
Transfer the mixture into an oven baking dish or treat yourself to one of our Claypots
Ghana 5 Spice infused breadcrumbs
Add the Ghana 5 Spice to the Panko Breadcrumbs and mix well.
Sprinkle the mash first with Parmesan Shavings, 50g Cheddar and the Ghana 5 Spice infused breadcrumbs
Bake this in the Oven for 20 minutes till you have a golden crust. Whilst hot add a pinch of our Herby blend. Let it rest for 5 - 8 minutes.
